Hula into Spring with Hawaiian Meatballs

With Spring just upon us, our team is always looking for new ideas and recipes to add to our seasonal menus incorporating new flavours and adding to our cultural diversity. 

To celebrate the warmer weather, today we chose to hula into the season with Hawaiian Meatballs, a delicious and healthy recipe you can make at home.

Our tasty recipe will serve four hungry humans.

Ingredients:

  • 25g chopped brown onion

  • 1 tbs continental parsley

  • 1 garlic clove

  • ½ tsp dried mixed herbs

  • 40g red capsicum

  • 180g canned pineapple, in juice, drained

  • ½ tbs cornflour

  • 01 tbs plain flour

  • ¼ cup cooked white rice

  • 1 large egg

  • 300g pork mince

  • ⅛ cup water

  • 1 tbs soy sauce, reduced salt

  • 1 tbs tomato sauce

  • ½ tsp oil

Method:

  1. Cook the rice, drain.

  2. Mix the mince, garlic, eggs, capsicum, herbs, parsley and rice.

  3. Make meatballs (about 2 tablespoons of mince). 

  4. Dust with flour and slightly flatten.

  5. Heat oil in a large pan and cook meatballs in batches. 

  6. Cook for about 10 minutes (about 5 minutes on each side) or until cooked right through. Meat should be well cooked, not rare.

  7. As each batch of meatballs are cooked, drain on absorbent paper and keep warm.

  8. Make sauce by blending the cornflour with water to make a smooth paste. 

  9. Stir this into all the other sauce ingredients. 

  10. Stir continuously over moderate heat until it comes to boil and thickens. Pour over or serve with meatballs.

Serve: serve with bread and salad or a selection of vegetables.
